How is the healthy New Year kick start going?
I am pleased to say I am still keeping up with all the little tips we talked about a few weeks ago. If you missed these take a look here.
I have also been making some healthy and nutritious soups to help keep me on track
Today I have one to share with you that I have made a few times over the last few weeks.
Here is what you need to get started:
1 butternut squash
2 sweet potatoes
4 carrots
1 red pepper
And this is what you do:
- Peel and chop all veg
- Roast in the oven at 200 degrees until soft
- Allow to cool slightly and then blend the ingredients
- Add pepper, ginger and chilli to taste
- You may need to add some vegetable stock so the soup is to your liking
- You can eat this straight away or store in an air tight container in the fridge or freeze in in soup bags until needed.
- Serve with a teaspoon of crème fraiche and a wholemeal pitta bread.
This soup is full of Beta carotene which is an antioxidant found in fruit and veg that helps to even out the skin tone and improve the skin texture plus protect the skin from the damaging effects of the sun.
Seems a good enough reason to get cooking to me and on top of all this it really does taste fabulous.
